I’m not a huge fan of quiche. In fact, just eggs skeeve me out a bit. I went for approximately 25 years of my life without eating any quiche. It never seems like it’s fully cooked, and it just has the texture of something icky so I avoided eating it for a least two decades.

Until a few months ago when I invited my Mom and Dad to join us for a Mother’s Day brunch and I decided we should have a quiche. It seems that after going so long without it, I now really love it. I made a quiche this morning from a super simple recipe. I’m not a fan of bacon bits though, so we just cooked up some bacon and I smashed it all with a rolling pin and we used that.

You should try it. Really.
