I can’t think holidays without thinking about peppermint so for the second week in a row, we’ve made something with peppermint. Last year was the first time I tried making peppermint bark and it was probably the easiest thing I made during the entire holiday season. I did basically the same thing this year:

1. Melted both white and dark chocolate in separate bowls
2. Smashed the heck out of some peppermint candy with my rolling pin
3. Mixed some peppermint extract into the melted dark chocolate, and some vanilla extract into the white chocolate
4. Pour the melted dark chocolate onto a baking sheet lined with wax paper and spread it around
5. Pour the melted white chocolate on top of the dark chocolate and spread that around, mixing it with the dark chocolate to make it look really pretty but not so much as to combine them
6. Sprinkle the crushed peppermint candy along with some peppermint and/or red and green sugar over the top of the chocolate.
7. Place into refrigerator until cold and firm
8. Break into pieces and store in an airtight container in the refrigerator

My daughter and husband even put pieces of this into their coffee and loved it.
