As you read in my last post, we’re starting the holidays early in our house and each week we’ll be making a holiday treat. This week we made a peppermint ice cream pie to kick off the season and simultaneously celebrate my older daughter’s 18th birthday!

I followed this recipe and overall it turned out really well. I think if I were to make it again, I’d use fresh mint in the milk/sugar mixture so that it was infused with mint flavor. I felt like the extract made it taste a little ‘funky’ and real mint would be much better. ┬áThat being said, it was a decent start to our holiday and a simple treat.

After making the peppermint ice cream based on the above recipe, we poured the entire mixture into a premade chocolate pie crust and just put it in the freezer for a few hours.
